Balsamic Goat Cheese & Walnut Sweet Potatoes

Want to really impress your peers with your sophisticated palette? Pull out this dish during lunchtime. Not only does it look fancy, but it's also packed with nutrient-dense ingredients like omega-rich walnuts and bursting-with-beta-carotene sweet potatoes. How posh!

Time: 3-4 hours (or 6-8) + 5 minutes

Serves: 4-6

Ingredients:

  • 4-6 sweet potatoes washed and pierced all over with a fork
  • 1/2 cup crumbled goat cheese
  • 1/2 cup walnuts, chopped
  • Balsamic glaze
  • Optional toppings: sun-dried tomatoes, fresh basil

Directions:

  • Cook sweet potatoes in a slow cooker, microwave, or oven until soft. Let cool
  • Divide the goat cheese and walnuts evenly among the sweet potatoes, then drizzle with the desired amount of balsamic glaze
  • Serve with other desired toppings or divide among food storage containers, and store in the refrigerator/freezer 
Recipe Modifications:
  • Gluten-free: None
  • Nut-free: Omit walnuts and sub with preferred seeds (ex: sunflower seeds)
  • Vegetarian/Vegan: Omit goat cheese and sub with preferred plant-based cheese

Recipe Notes:

  • If cooking sweet potatoes in a slow cooker, cook on HIGH for 3-4 hours, or on LOW for 6-8 hours
  • If cooking sweet potatoes in an oven, wrap them in aluminum foil, then roast them in the oven at 375 °F for 45-90 minutes (cooking times may vary depending on the size of the potato)
  • If cooking sweet potatoes in a microwave, wrap them in damp paper towels, then individually cook them for about 4-5 minutes in the microwave. Turn, then cook for an additional 4-5 minutes. Repeat with other potatoes.
