Time: 10 minutes

Serves: 4-6

Ingredients:

  • 1 cup uncooked quinoa, cooked and cooled to at least room temperature
  • 2 cups cooked and shelled edamame (thawed if frozen)
  • 2 medium zucchini, spiralized
  • 5-8 oz (~1 bag) salad greens (any kind you prefer)
  • 1 cup hummus (any flavor you prefer)
  • 1 avocado
  • Optional toppings: fresh cilantro, lemon juice

Directions:

  • Assemble the bowls by equally dividing the quinoa, edamame, spiralized zucchini, salad greens, and hummus among them
  • Serve with desired toppings or store in the refrigerator

 Recipe Modifications:

  • Gluten-free: None
  • Nut-free: None
  • Vegetarian/Vegan: None

Recipe Notes:

  • Can sub quinoa with any other preferred grain
  • I recommend purchasing cooked, shelled, frozen edamame and thawing it by running it under cool water
  • The zucchini does not need to be spiralized, and can instead by sliced if preferred
  • If adding avocado to the dish, add it right before serving for optimal freshness
